Cait’s Hot Cocoa Recipe

There’s nothing quite like a warm cup of hot cocoa on a chilly day—especially when it’s made with Chef Cait. When you’re cozying up at home and reminiscing about the best days at camp, this rich, chocolatey, over-the-top treat will transport you right back to the warmth and joy of your time at Campfire Circle.
Step 1: Homemade Marshmallows
The magic starts with these pillowy, melt-in-your-mouth marshmallows!
Ingredients:
- ¾ cup water (divided)
- 2 tablespoons gelatin
- ⅔ cup light corn syrup
- 2 cups white sugar
- 1 tablespoon pure vanilla extract
- ¼ cup cornstarch
- ¼ cup confectioners’ sugar
Instructions:
Prepare the pan: Line a 9×9 inch baking dish with plastic wrap and coat it with non-stick spray. Lightly spray another piece of plastic wrap to use as a cover.
Soak the gelatin: In the bowl of a stand mixer fitted with a whisk attachment, pour in ½ cup of water and sprinkle the gelatin over top. Let it sit while you prepare the syrup.
Make the sugar syrup: In a saucepan, combine the remaining ¼ cup of water, corn syrup, and sugar. Bring to a boil over medium heat and let it boil hard for 1 minute.
Whip it up: Carefully pour the hot syrup into the gelatin mixture and beat on high speed for 12 minutes, until fluffy and forming stiff peaks. Add the vanilla extract and mix just until combined.
Let it set: Pour the marshmallow mixture into the prepared dish and smooth the top with a greased or silicone spatula. Cover with the plastic wrap and let it rest for 4 hours (or overnight).
Cut & coat: In a shallow dish, mix together the cornstarch and confectioners’ sugar. Use an oiled knife or scissors to cut the marshmallows into 1-inch squares, then dredge them lightly in the sugar mixture. Store in an airtight container.
Step 2: The Ultimate Hot Chocolate
Now, for the star of the show—a rich, creamy, and perfectly balanced hot chocolate that pairs beautifully with your freshly made marshmallows.
Ingredients:
- 4 cups milk (or dairy-free alternative)
- ¼ cup unsweetened cocoa powder
- ¼ cup granulated sugar
- ½ cup chopped chocolate (white, milk, dark, or a mix!)
- ¼ teaspoon pure vanilla extract
Instructions:
Heat the milk: In a small saucepan (or double boiler), whisk together the milk, cocoa powder, and sugar. Heat over medium-low, whisking frequently, until warm (but not boiling!).
Melt the chocolate: Add the chopped chocolate and whisk constantly until it melts completely into the milk.
Finish it off: Stir in vanilla extract (and a pinch of salt, if you like!) for extra depth of flavor. Serve immediately.
Step 3: Assemble & Enjoy!
Now for the fun part! Pour the hot chocolate into your favourite mug, drop in a few of your homemade marshmallows, and watch them melt into gooey, delicious perfection.
